A banneton (proofing basket) helps your dough hold its shape and develop that beautiful, rustic pattern as it rises. Here's how to get the most out of yours.

Before First Use
If it's rattan/cane: dust it generously with rice flour before first use — this is what stops dough from sticking. If it's lined with linen, just flour the liner.

Using Your Banneton

  1. Dust the inside generously with rice flour (it resists moisture better than regular flour)
  2. Shape your dough and place it seam-side up in the basket
  3. Let it proof as your recipe directs
  4. Turn it out gently — the basket's ridges leave that classic spiral pattern

Cleaning & Storage
Never wash a rattan basket with water — it can encourage mold. Once dry, tap out excess flour and brush off any dough residue. Let it air dry fully before storing somewhere dry with airflow.

Common Questions
My dough is sticking — use more rice flour next time, and make sure the basket is fully dry before dusting.
Can I use regular flour instead? — you can, but rice flour holds up better against moisture.
